Burnt Toe

For dinner I decided to make one of Jon's favorite meals, Chicken Parmesan with Garlic Spaghetti. While I was roasting the Panko Bread crumbs my hand accidentally flipped the pan and 1/2 of the frying bread crumbs landed on my big toe. Meanwhile, Jon was scalded by boiling water while pouring the spaghetti water down the drain, parsley is flying everywhere, and I overcooked the garlic! Did all this make for a delicious dinner, YES! Do I miss my kitchen, YES!

A Family History Feat

Today I received something wonderful from another state. Besides having my husband back from Nashville, I received the documents I requested about a month ago from Illinois concerning Jonathan's great-grandfather, Solomon Boress. I think it's amazing the things I have learned from my Family History calling. I requested the application for Naturalization that Solomon filled out in order to become a U.S. Citizen. In the document he has written the name of the boat that he arrived in which I can then look up on the Ellis Island Records and check out the manifest for more clues. I am very excited!

Taste of Charlotte

Yesterday evening Jon and I headed to downtown to enjoy the "Taste of Charlotte." We had a good time and got to know the city a bit more.

Romantic Dinner

Last night we went to Jon's favorite restaurant, The Melting Pot. We had such a nice time together.

We made it to N.C.!

After much prayer and a leap of faith Jon applied to The University of Florida's Business School. Since getting accepted into UF's MBA program many doors have opened. It is so nice to see that our decision to stay in Gainesville for an extra year has immediately paid off. As soon as he got his acceptance letter one of his professors at Pharmacy School approached Jon for an internship opportunity in Charlotte, North Carolina. The details of the internship sounded amazing and so after asking me if he should do it (which I immediately said of course!) we headed to Charlotte.

Jon after our 71/2 hour trip! We took a detour to Paula Dean's restaurant in Savannah, Georgia but they were so booked, the wait time was 2 hours and we were still 5 hours away. Once we arrived to Charlotte we dropped off our things at our hotel and headed straight to downtown to do some exploring in our temporary new town. We ate at a neat pizza restaurant and then went to see "Speed Racer" on Imax. It was GREAT!

Albert survived the car trip and 3 nights at 2 different hotels. What a trooper. We feel bad that he has to temporarily live in this small tank but we couldn't take his humongous 2ND home tank with a built in heater and a coliseum with us.
