Michelle's Baby Shower

On Tuesday Ingrid and I co-hosted a baby shower for our dear friend Michelle who is expecting her first girl, Grace Knight. I had the best time and enjoyed being in such great company.

My first Pie

After Nicole and Liam's visit I was still on a baking kick and decided to make a SUPER easy and DELICIOUS key lime pie. It took me 2 minutes to make and Jon couldn't believe how delicious it tasted. Here is the recipe. I suggest anyone and everyone to make it.

Easy Key Lime Pie

1 14-ounce can sweetened condensed milk
1 6-ounce can frozen limeade concentrate (not thawed)
1 cup heavy cream
1 6-ounce graham cracker piecrust
Zest of 1 lime

Place the condensed milk, limeade concentrate, and cream in the bowl of an electric mixer fitted with the whisk attachment. Beat until fluffy and soft peaks form. Pour the filling into the piecrust and smooth the top. Refrigerate until chilled and loosely set, at least 4 hours (and up to overnight). Sprinkle the pie with the zest before serving.





I then decided to make some whip cream. Here is the recipe for that:


Whipped Cream Topping
3/4 cup heavy cream
1/4 cup confectioners' sugar



I let Jon decorate the pie by putting the whip cream in a zip lock bag and cutting a small hole at the end. Unfortunately, Jon has not mastered the art of light pressure when cake decorating and the bag exploded. But I love him for trying:)

A visit from Nicole and Liam

Last week I had the great pleasure of having one of my closest and oldest friends come stay at our house along with her sweet son Liam. I had a blast baking cookies, playing with Liam, and catching up! I am SUPER excited that she is moving back to Florida. I knew she couldn't stay away from the Florida sun:)

HAPPY BIRTHDAY ANDRES!


Happy Birthday to my wonderful brother Andres. I love him so much! I adore his silly sense of humor and his cute smile. He is very hard working and loyal to everyone he knows. He is also a spiritual GIANT! I love hearing his testimony and I am so proud that he served a mission for our church. I miss you brother and I look forward to seeing you real soon!

Small but significant

I taught myself how to knit a few weeks ago. I know I am just starting out but I am very happy that I managed to make a mini-scarf. I know it isn't perfect but that is why practice makes perfect!

Orlando, Cape Canaveral FL

Jon and I went down to Orlando for a few days and had a great time visiting our family, the Orlando Temple to perform ordinances for his family, Ikea, and Kennedy Space Center.

Jon thought this bird was cool because he managed to eat the fry that 20 other birds were afterThey have really neat IMAX movies. That was the highlight of our trip. This one's for you Ben!
